Easy Chicken Soup

An easy and healthy meal you can make using simple ingredients.

Serves: 1-2 people
Prep time: 10-15 mins
Cook time: 15-20 mins

150 grams chicken breast (pre-cooked chicken is fine)
4 cups of chicken stock (stock cube or tetra-pak)
2 tablespoons soy sauce
6 button mushrooms
1-2 tablespoons lemon juice
2 teaspoons olive oil
1/2 cup mixed frozen veggies (or use fresh veggies roughly chopped)

1. Cut chicken into small pieces
2. Slice mushrooms thinly
3. Place chicken pieces, soy sauce and stock into a large saucepan and bring to the boil
4. Simmer soup for 10 mins
5. While chicken is simmering, heat the oil in a small pan and cook mushrooms gently for 5 mins
6. In the last 5 mins of cooking add mushrooms, veggies and lemon juice to the soup. Simmer for 5 mins
8. Serve with toast or warm bread
